Starting the Morning Out Right

My morning didn't start out quite so great this morning...I opened my eyes to a rainy dreary day and quickly discovered I had no voice! How in the world did this happen? I seriously considered covering my head up & going back to sleep, but I already had 2 wide eyed girls staring at me. Abby said "Mama, hurry up & get up let's fix Daddy a birthday breakfast before he gets home." To which, Lani started jumping up & down on my bed screaming "C'mon, c'mon I'll help!" They were so excited, how could I say no? I slowly made my way to the kitchen behind them with my eyes barely opened trying to decide what to fix, I wanted to fix omelets, but no that didn't satisfy my girls & I can't really win an argument with a voice that's barely a whisper now can I! They both wanted muffins, I didn't have any packages of them in the cabinet that I could quickly throw together, but I did have a recipe for apple cinnamon muffins that I had been wanting to try, so we all 3 got to working...and I must say what a mess my girlies made...we ended up with flour all over the table & one girl, spilled buttermilk & broken eggs in the floor, BUT they had fun, the mess was easily cleaned up, the muffins were delicious & memories were made...so I would say we started our morning out right after all!


Apple Cinnamon Muffins

2 cups all purpose flour
2 tsp baking powder
1/2 tsp salt
1 1/2 tsp ground cinnamon
1/4 tsp ground ginger
3/4 cup brown sugar
1 large egg
2 tbsp butter, melted and cooled
2 tbsp vegetable oil
1 tsp vanilla extract
1 cup buttermilk
1 1/2 cups diced apple

3 tbsp coarse sugar
1/2 tsp ground cinnamon

Preheat oven to 375F. Line a 12-cup muffin tin with paper liners.

In a medium bowl, whisk together flour, baking powder, salt and spices.

In a large bowl, whisk together brown sugar and egg. Whisk in melted butter, vegetable oil and vanilla. Working in two or three additions, alternately stir in flour mixture and buttermilk, ending with an addition of flour and mixing only until no streaks of flour remain visible in the batter. Stir in diced apple.

Divide batter evenly into prepared muffin cups filling each to the top, or slightly over.

In a small bowl, stir together coarse sugar and additional 1/2 tsp ground cinnamon. Sprinkle generously over muffins.

Bake for 15-18 minutes, until a toothpick inserted into the center of a muffin comes out clean and the top springs back when lightly pressed.

Quite the the slacker...

It seems since my first post things have gotten quite hectic around my house and I just haven't made the time to post again. Last week I had my very first catering job...to say I was nervous would be an understatement! I catered for a Women's Golf League of about 20, changed my menu about a million times, about had 10 nervous breakdowns, but somehow managed to pull it off and impress a few people, including myself! I have tons of pics that I need to post from it, but of course my computer, my camera & myself just aren't working together very well today, so that will have to wait.

Starting Out

Well I've wanted my own blog for quite sometime, but for some reason I just never really thought I had it in me to start one...well today I decided it's now or never & jumped in head first! At this point I really don't have a clue what I'm doing, so please be patient! I plan on sharing my favorite recipes, websites & my everyday life stories with y'all! I love to cook, my girlies are absolutely hilarious & I'm pretty crazy, so I should be able to keep y'all amused & coming back for more!

I quite honestly have my dream job...some may think I'm crazy, but honestly all I really ever wanted to be was a Mama. No I don't have a fancy degree, nor do I get paid for all that I do, but I don't think I could ever get any greater satisfation from anything else that I could do. There's alot in my life that I haven't done right, but being a good Mama is the one thing that I can honestly say I think I've gotten right! With that being said, my baby will soon be 5 & will be starting Kindergarten in the fall, which makes me so sad. My oldest daughter Abby started preschool when she was 3, I was sad, but I had a new baby at home that kept me entertained until that big yellow bus brought Abby home everyday. Now when Lani goes to school it's going to be another story, my mischievous little girl is my "velcro baby", as my Mama calls her. For the past 4 1/2 years we have been pretty inseperable, rarely away from each other, so it's going to be a big adjustment for both of us!

Because of the changes coming my way, the past few months I have been thinking of ways to occupy my time once both my girls are in school. One of the things that I love besides my girlies, is cooking. I love to cook real home cooked meals and seem to always be doing just that. Well a few of my friends talked me into making a "recipe" page on Facebook, so I did just that a few months ago & much to my surprise "What's Cookin'?" took off ! From there I decided I would start making cinnamon rolls & sell them to people I knew, so far I've had a pretty good demand for them & people seem to like them. Then I decided that maybe, just maybe I could start my own small catering business...well I have gotten my first job & am just keeping my fingers (and toes) crossed that I do well with it. In May I'm going to start making entree dinners, desserts & salads & selling them, so we will have to wait & see how that goes.

My children got their patience from me & that pretty much equals no patience whatsoever & now that I've been told about a million times that it's suppertime, I better listen & get to cooking! See y'all later!
